    Assignment Prompt & Instructions

I need a discussion post completed by Wednesday.

The content of your original post and responses to two classmates should be unique, original, and align with the discussion expectations. Repetitive (redundant) answers will not receive full credit.

Write in your own words and paraphrase content from cited sources–including Course Learning Resources–in a thoughtful manner. Content copied verbatim from websites, books, magazines, artificial intelligence tools (e.g., ChatGPT), and so on, will not receive credit. You are required to use APA formatted in-text citations and a reference list in each original post.

Use complete sentences, correct spelling and grammar, and well-written and organized paragraphs.

While there is no minimum word count, most students find they can convey their ideas in a descriptive, thoughtful way in about 75-150 words in both their original posts and responses to classmates.

You may select ONE of the following discussion topics (Options A, B, or C) for your original post.

**Option A:** The textbook shares **three** ideas for decreasing your environmental impact in regard to protein consumption (see Unit 6 Section: “Protein Food Choices and Sustainability”).

    1. What are the three ideas from our textbook?
    2. Which of these three ways would you be willing to try?
    3. Describe your current protein intake.
    4. Discuss at least three ways that you could change your current protein intake to try this small shift in environmental impact.

**Option B:** You work in a nutrition education office. A client has been diagnosed with atherosclerosis and isn’t sure what they can eat to help manage their condition. Describe atherosclerosis including how diet plays a role in the development of this condition. Provide your client with at least **three nutrition-related suggestions** that could help them slow the progression of atherosclerosis. Discuss the evidence for your nutrition-related suggestions. Cite sources.

**Option C:** Visit the link for [Dietary Supplement Fact Sheets from NIH](https://learn.umgc.edu/d2l/common/dialogs/quickLink/quickLink.d2l?ou=1258268&type=content&rcode=UMUC-8870520) (Week 4 Learning Resources > Page 5:  Additional Content for Real Life). Select one of the supplements and answer the following questions. Use and cite additional reliable and credible resources as needed.

    1. What is the supplement?
    2. Why did you choose this one specifically?
    3. What are the typical uses?
    4. What concerns do you have about this supplement?
    5. What are food sources of this nutrient (if any)?

**Check this brief video for an orientation to NUTR  resources and assignments:** [**https://www.youtube.com/watch?v=F6dhea-iNIs**](https://www.youtube.com/watch?v=F6dhea-iNIs)

Understanding lipid panels can help you determine what, if any, intake-related changes you could make to impact your cholesterol and triglycerides. Be sure to watch the course videos in Unit 3 for a further understanding of this content before starting this assignment.

    In this assignment, you will:

    – Journal your intake for an entire 24-hour period
    – Pretend the report below is yours and determine if your levels are within normal limits or concerning in some way
    – Isolate foods that may be high in nutrients that could have a negative impact on your lipid profile
    – Discover replacements or changes to your intake that could lead to a more positive impact on your lipid profile

See [sample assignment](https://leocontent.umgc.edu/content/dam/permalink/8564aa84-a36d-4d5b-a821-069464bb491e.html) and rubric (see below) for additional assistance before starting on this assignment. Make sure to review the rubric before submitting your assignment to ensure that you have included all the assignment expectations.

NOTE: Please carefully read the rubric (see below) before submitting your assignment to ensure that you have included all the assignment expectations. After your grade has been posted, please check the grading rubric for detailed feedback from your instructor and suggestions for improvement.

_NOTE: If this assignment is triggering for you in any way, you can use a fictitious food log, use the food intake from a friend or relative, or reach out to your instructor for an alternate assignment option._

    **Instructions**

**STEP 1:** You will track your intake for one full 24-hour period.

    – This needs to be a **different** day of intake than you submitted in the Unit 2 assignment. [ _NOTE: You will be using your food journal from the Unit 2 Assignment: Food Journaling & Carbohydrates, as well as your food journal from this assignment collectively with one additional food journal day for the Unit 4 Assignment. You will need a total of three distinct days of food journals for the Unit 4 Assignment_.]
    – Please refer to the Unit 2 assignment instructions for details on completing a food journal with all details and quantities needed.
    – Be sure to review any grading feedback from your Unit 2 assignment to ensure that you are tracking your intake with enough detail.

**STEP 2:** Use the Cholesterol Panel Handout (Unit 3 Learning Resources > page 2 Required Content ) to fill in the third column in the chart with “high”, “normal “, or other analysis term as needed to describe your results. The Cholesterol Panel Handout is also available at Unit 3 > Learning Resources > page 2 Required Content > Additional Readings ( [direct access here](https://umuc365.sharepoint.com/:b:/s/AA-OperationRisingTideUS/EUa0-mBFi3ZNi9XHHvnihE4BfGGEHSTkD9LT-xelXjgJVA?e=Vh7b2K) ).

    232 mg/dL

    LDL

    124

    HDL

    48

    Triglycerides

    152

**STEP 3:** Select three lipid-rich foods or beverages from your food journal for this Lipid Panel Analysis assignment. As a reminder, intake of different nutrients in lipids, such as saturated and unsaturated fatty acids, impact lipid panel results.

In list or table format, include the following details for each of the three lipid-rich foods/beverages you selected:

    1. The name of each lipid-rich food you identified (Example: Pepperoni pizza)
    2. The amount of each lipid-rich food you consumed (Example: 1 cup; 3 ounces; etc.)
    3. Identify a nutrient/ingredient in the food/beverage you suspect impacts the lipid panel profile in a negative way (Example: Saturated fat).
    4. Search Nutrition Facts Labels or restaurant/product nutrition information for the nutrient you identified in Step 3-c for each of the three foods you selected. List the number of grams or milligrams of this nutrient of concern. (Example: 7 grams)
    5. The use of normal/optimal ranges for lab results implies that results outside of those ranges may have a negative impact on health. The different types of nutrients in lipids (for ex., saturated fat) have distinct health impacts. Briefly discuss (1-2 sentences) how the nutrients/ingredients you selected impact your lipid profile in a negative way.

Note: [The United States Department of Agriculture FoodData Central](https://fdc.nal.usda.gov/index.html) be helpful while looking for unsaturated or saturated fat content of whole foods. After selecting the food/beverage item you will see a long list of nutrients in a table format. Saturated fats and unsaturated fats are in the “Lipids” section. Be sure to use the “Total” amounts for the nutrient you are highlighting!

**STEP 4:** Using the three foods/beverages you selected above, find an alternative (replacement) food/beverage that you could include in your diet that you would expect to have a more positive impact on a lipid profile than the items in the food journal.

Use a list or table format and, for each of the three foods/beverages, address a-e below:

    1. The original item
    2. The alternate (replacement) for original item
    3. What is one serving (portion size in grams or milligrams) of the replacement (alternate) item?
    4. Provide the number of grams or milligrams of the nutrient you listed in (d) above in one serving of the new item (Example: There are 5 grams unsaturated fat in 3 oz cooked salmon)
    5. Briefly discuss (1-2 sentences) how the new item would be expected to have a more positive impact on a lipid panel profile. The positive impact can be due to the presence of a different, specific nutrient from the nutrient you highlighted in Step 3 OR a reduction in the nutrient you highlighted in Step 3.

Note: The United States Department of Agriculture FoodData Central may be helpful here as well.

**Optional: Want to Expand Even More?**

Look at your most recent lipid profile. If you have access to the four lab values included in this assignment, you may replace the “Lab Results” column with your personal data.

Then, follow the instructions for analyzing your results. In order to edit the table, you can copy/paste the table from these instructions into your assignment, re-create the table, or use the [assignment template](https://leocontent.umgc.edu/content/dam/permalink/c5a3773e-3967-4478-84a0-b9e630115019.html).

Follow the rest of the assignment instructions using your own lipid profile data.

If you complete this optional change, please make a note at the top of your assignment that you used your personal data to alert your instructor.

    Assignment Prompt & Instructions

You will use three full days of food journaling for this assignment. Two of the food and beverage journals should be the same as the two you created for past assignments in this course. These two previously completed journals should come from:

    – Unit 2 Assignment: Food Journaling & Carbohydrates
    – Unit 3 Assignment: Analyzing a Lipid Profile

Those food journals will be entered into a web-based nutrient analysis software, called Cronometer.

After entering all three days into the online software, you will obtain a report of averages that displays calories, macronutrients, and micronutrients consumed as an average for a day based on the three days you entered. That is, the analysis results represent your daily average intake for those three days. Please do not divide the numbers by three during your interpretation of the results.

This report of averages is called the “Nutrition Report” and it will be needed to complete the tables on your Worksheet.

    In this assignment, you will:

    – Document your intake for one full day and add this food journal to your two previously submitted food journals for a total of three days of food journals
    – Enter your intake from those three days into a nutrient analysis software, Cronometer
    – Complete [three tables with nutrient-specific information](https://learn.umgc.edu/content/enforced/1258268-006326-01-2252-US3-7397/Unit%204%20Assignment%20Nutrient%20Tables%20Template_07032024.docx)
    – Compare your average intake to the recommendations from the National Academies of Sciences, Engineering, and Medicine

The assignment needs to be completed in the correct order to obtain all the necessary information, as shown in the flow diagram below. You’ll need to complete the food journal and collect your two previously submitted days of food journals to enter data into the nutrient analysis software (Cronometer). Then you’ll need the report from the nutrient analysis software to complete the nutrient tables.

See sample assignment ( [Part 1](https://leocontent.umgc.edu/content/dam/permalink/b71e9142-f5b3-414b-a89c-cf605b81f933.html), [Part 2](https://leocontent.umgc.edu/content/dam/permalink/c0f3fd0a-379e-4369-b9b4-b7398c0fd243.html), [Part 3](https://leocontent.umgc.edu/content/dam/permalink/72aaea50-7d72-483a-a7c9-38e064a0ba61.html)) and rubric (below) for additional assistance before starting on this assignment.

**STEP 1:** Complete three full days (24 hours each) of food journaling.

    – Use the guidelines in the Unit 2 assignment for food journaling plus consider the grading feedback for the Unit 2 assignment: Food Journaling & Carbohydrates and Unit 3 Assignment: Analyzing Lipid Profile. Use the previous assignments and feedback to ensure you include all the information you’ll need to enter your data into the nutrient analysis software, Cronometer.
    – You are expected to use your previously submitted food journals after completing your edits. Make sure to correct any errors or omissions based on grading feedback you received on the the previous two assignments.
    – Make sure to submit one document that includes all intakes for each of the three days clearly separated by dates.
    – Please include three separate dates within this course's timeframe.
    – Special Note: If you are concerned about your food journaling skills and wish for a review before submission, reach out to your instructor via email at least 72 hours before this assignment due date for a possible opportunity to have your journals reviewed (ungraded) before moving on to Steps 2 and 3. Your instructor will aim to accommodate all requests for reviews but will alert you if they are unable to do so.

**STEP 2:** Enter data into Cronometer (Cronometer.com), the nutrient analysis software. You must use this specific software to complete the project. Other free analysis software may not contain all the required information needed for this project. Note: If you have an accommodation that does not work with Cronometer, please alert your instructor immediately.

    – Download the [Unit 4 Assignment Step 2 Instructions](https://learn.umgc.edu/d2l/common/dialogs/quickLink/quickLink.d2l?ou=1258268&type=coursefile&fileId=Unit+4+Assignment+Part+2+Instructions.pdf) which includes images to help you complete this step.
    – You must include images of the entire Nutrition Report that you obtain from Cronometer starting from the date range of the report to the end of the micronutrients (both columns).
    – Your images of the Nutrition Report can be in one document or multiple image files, depending on how you copy the report. You may submit as a PDF, Word document, or image files, but the file(s) must be able to be opened or you will not receive credit for this assignment. If no images of the Nutrition Report are submitted, you will receive a “0” and your instructor will reach out to discuss next steps.

**STEP 3:** [Three nutrient tables](https://learn.umgc.edu/content/enforced/1258268-006326-01-2252-US3-7397/Unit%204%20Assignment%20Nutrient%20Tables%20Template_07032024.docx) (MS Word Document) must be filled out completely with both your intake and your recommended intake.

    – Your intake information will come from the Cronometer report. Remember that the Cronometer results are an average of your daily intake over the three days of food journaling. For example, if the report shows you’ve consumed an average of 60 grams of protein per day, it means you consume that amount per day on average.
    – There are three tables. One each for calories, macronutrients, and micronutrients. All must be completed for this assignment.
    – NOTE: To assist with completing Table 3 Micronutrients, you can use the linked [PDF for the Reference Tables for RDA/AI and UL](https://learn.umgc.edu/content/enforced/1258268-006326-01-2252-US3-7397/Reference%20Tables%20for%20Adequate%20Intake%20and%20Upper%20Limits.pdf)

What To Include in Your Submission

    – 3-day food journal (one document with all three days of intake and dates included)
    – Cronometer screenshots
    – Completed Nutrient Tables document
